- 1/2 cup chopped Vidalia onions
- 1/2 cup light olive oil
- 3 TB white balsamic vinegar
- 1 TB and 2 tsp granulated sugar
- 1 TB mayonnaise
- 1/2 tsp Dijon mustard
- 1/4 tsp kosher salt
- 1 (10 oz) package fresh spinach
- 2 1/2 cup fresh strawberries, stemmed & halved
- 4 oz blue cheese, crumbled (about 1 cup)
- 1 cup chopped candied pecans
Process onion, oil, vinegar, sugar, mayonnaise, mustard, and salt in blender until creamy and smooth, about 50 seconds.
Arrange spinach, strawberries, blue cheese, and pecans on a large platter. Drizzle with dressing.
