3/4 cup flour
1 teaspoon sugar
1 teaspoon cornmeal
2 teaspoons baking soda
1-2 teaspoons salt

3/4 cup milk
2 1/2 cups chopped onions
Oil for frying

Mix dry ingredients, add milk, stir (makes a thick batter). Fold in onions and mix thoroughly. Heat 1/2” oil in skillet over med-high heat. Gently drop tablespoons of batter in hot oil, flatten slightly. Brown both sides until crisp. Drain on paper towel.
Serve with dippers like ranch dressing, BBQ, etc.
